We’ve got about three weeks left of good cookout weather… before it becomes so unbearably hot that you simply want to lie around inside, eating popsicles and cold salads from the deli, soaking up A/C in the cool dark, avoiding the blinding white 100°+ weather.

And it’s just us, so let’s admit it: you know you’re already tired of burgers.

But you’ve got to find dishes that aren’t crazy-time-consuming, or will make the family scrunch up their faces.

•   Grilled skirt steak with a chimichurri sauce is simple and elegant and goes beautifully with a red sangria.
